A big weekend calls for a big breakfast!
If you, too, have a weekend ahead of baking, crafts, gardening, running and, of course, plenty of socialising, then kick it off to a good start with warm, crispy baked oatmeal. Even better – banana bread in oatmeal form. Enjoy x
Banana Bread Baked Oatmeal
Recipe adapted from Budget Bytes
Serves 6 – 8
1.5 cups (about 4 medium) mashed bananas
half a squeezed lemon (alternatively, use vanilla extract)
1/3 cup brown sugar
2 large eggs
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp cinnamon
1/8 tsp nutmeg
2 cups milk
2.5 cups old-fashioned oats
1/2 cup chopped walnuts
Preheat the oven to 350˚F (180˚C). Mash the bananas well with a fork.
Whisk the bananas together with the lemon juice, brown sugar and eggs. Mix in the salt, baking powder, baking soda, and spices. Add the milk, then stir in the oats. Roughly chop the walnuts and add..
Spray the inside of a glass dish or baking tin with non-stick spray. Pour in the oat mixture. Cover with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for another 15 minutes or until the center is solid and the edges are slightly golden brown.
Serve warm with yoghurt, milk or cream.
